The collapse of the Soviet Union
played an important role in making caviar unaffordable.
The current price for a pound of fish eggs is extremely
high, even for the wealthiest of caviar lovers. As a
result, the black gold has even disappeared from the
menus of the very rich.
It is, therefore, time for an
affordable alternative.
Caviar is the salted roe of the female sturgeon, a type
of fish that descends from prehistoric times. Many years
ago, caviar could be found on the table of ordinary
Russian fishermen and farmers as a cheap, though tasty,
meal.
Caviar has since been discovered as a delicacy and, as a
result, has experienced turbulent times. For example,
tsars rated their important visitors by the quantity of
caviar that was served and kings and emperors in Europe
followed this example, which resulted in an enormous
increase in demand.
The competition amongst the fishermen grew fierce, also
on the Caspian Sea. The communist Soviet regime ensured
that the export of caviar was guaranteed for rich
westerners via strict monitoring and by enforcing heavy
penalties on poachers. In 1989, though, it all went
wrong and the sturgeon mafia could do as it pleased.
The fact that caviar is so scarce and the price is so
high has made the world ready for a more than acceptable
alternative:

Now that caviar lovers can only dream
of caviar, it has become possible to enjoy a special
substitute, produced via innovative means, whose taste
comes very close to the refined taste of sturgeon
caviar, but for only at a fraction of the price of
caviar.

There is little point in grieving
about the fact the caviar has become unaffordable,
because there is now a more than acceptable alternative.
